Vintage – “Rtveli”

The important and magical time of Rtveli or grape harvesting, is held in autumn, once the grain crops are gathered in and in every home there are baskets full of locally produced pomegranates, pears, apples and peaches. In the fine early mornings during Rtveli, the vineyards fill up with cheerful calls, the Rtveli merry songs. The grapes are harvested using a Godori – a large basket made of branches of cherry tree. This is the time of year to prepare the famous and delicious Churchkhelas, to a recipe traditionally kept secret by your grandma and passed down when only truly necessary. But what isn’t secret is that you start to prepare it far in advance by stringing together as many walnuts as possible and placing them into Tatara, a mixture of grape juice and flour which is cooked in a pot. The walnuts are removed from the Tatara and dried, placed into the Tatara again and dried once more. The Churchkhelas are then ready.

Alaverdi                                              Visit to monastery of Alaverdi (VI c), the monastery’s cathedral is  dedicated to St. George (XI c.), Excursion in wine cellar (XVI c.), which was a part of  the monastery, where monks made very special  monastery wine. Archeologists found more than 40 quevris, large clay vessel dug into a soil in which wine ferments.

Day 6:    Vintage – “Rtveli”  
Vilage Napareuli                              Kakhetian – The region is famous for its ancient winegrowing traditions and hospitality. The guest has an opportunity  to participate in grape harvest, pressing and in the process of  winemaking. “Zavodi”– to make vodka. You can see: open and closed type wine cellars, taste several kinds of wine produced by family methods as  “Kakhuri”(white), “Mtsvane”(white), “Saperavi”(red) and “Kaberne”(red). There is 2 centuries old press (equipment used for wine squeezing), which is until now used for the purpose of making wine. Here you can also see old earthen crocks (“kvevri”), where different types of  wine are stored. we will also see how traditional Georgian bread is baked and how Churchkhela is made. Brief lecture will be provided about masterpieces of Georgian cuisine, such as Khachapuri, Khinkali, Mtsvadi and many other Georgian dishes. You will have an opportunity to participate in this process and master old Georgian culinary technologies and finally taste the dishes made by your own hands. All this will be provided in a pleasant ethnographic environment decorated with old Georgian exhibits and other interesting things.
Georgian folk group and Tamada (toast-master) will make your banquet unforgettable.
